Eryngium planum
An evergreen favorite at the flower market! Sea Holly is a perennial; it lasts for several years in the flowerbed and spreads beautifully. The "flowers" and leaves are slightly prickly; it does look like a miniature thistle after all. The stems and tops are silvery blue. And mature, bloomed Sea Holly doesn't wilt, making it great for drying, wreaths, and similar uses.
For drying, harvest when the thistles are colored blue and the stem below the thistle is firm. Just hang them upside down in a dry, ventilated place, out of sunlight.
