Salicornia europaea
Glasswort, often known as sea asparagus, is an extraordinarily interesting edible annual that will enrich both your garden and kitchen. In its native habitat, it grows naturally on sunny coastlines in sandy, saline soil, forming dense green carpets. Here, it prefers full sun and very well-drained, rather poor soil. It also thrives beautifully in containers on a patio or sunny balcony. You will receive a beautifully established seedling in a pot, which you can simply transplant to your chosen spot. A major advantage is that it does not suffer from common diseases or pests, making it exceptionally easy to grow even for a complete beginner.
This small succulent plant grows to a height of ten to thirty centimeters, and from May to August, tiny, inconspicuous flowers in white, yellow, and green tones appear. The biggest appeal of glasswort, however, is its culinary use. The fleshy green stems have a naturally salty flavor somewhat reminiscent of young spinach. It tastes great raw as a crunchy addition to fresh salads, but it becomes an absolute delicacy when briefly sautéed in butter with a little garlic. Growing it will give you not only an unconventional green ornamental for sunny borders but also a fantastic ingredient for your culinary experiments.
