Lepidium sativum
As the name suggests, the leaves of this cress are large, which you will appreciate especially when sprouting. The cress blooms beautifully and gently; after blooming, it creates wonderful tiny coins on the stems and is suitable for drying! It is the same type of cress as for sprouting, so you can use it in both ways!
For drying, we harvest the cress when the stem is firm with mature coins. Do not delay drying too long for a beautiful golden color, otherwise the color turns grey. Just hang them upside down in a dry and ventilated place, out of sunlight.
