Sanguisorba minor
*Sanguisorba minor*, commonly known as salad burnet, is a perennial herb that brings the genuine charm of wild meadows and steppes to the garden. Its decorative leaves form dense clumps that remain green long into the winter and sprout very early in the spring. In nature, it seeks out sunny and dry habitats, often on limestone bedrock, which is why it will thrive best in the garden in well-drained soil in full sun or light partial shade. It is an exceptionally hardy plant that easily handles frosts down to -34 °C and does not suffer from any diseases or pests. The inflorescences in the form of tiny pea-green flower heads float on thin stems and add an interesting, fine texture to the planting. In addition to its aesthetic value, salad burnet also has practical uses in the kitchen, where its leaves with a delicate cucumber aroma refresh summer dishes. In garden architecture, it finds use in gravel beds, rockeries, or as an edging for pathways. Because of its undemanding nature and ability to grow even in poor conditions, it is a rewarding perennial that does not require support and reliably enlivens even the drier corners of the garden.
